Meal Plan: October 7th



I recently found an amazing magazine with a TON of healthy sheet pan and skillet meals. I can’t seem to find it online other than here, but it should still be in grocery stores! I purchased mine at the Whole Foods checkout. I will be cooking some recipes from there, and will be sure to do demos in stories, so be sure to follow along on Instagram!

Monday: Roasted chicken thighs, shallots + acorn squash - bring on all the fall flavors! I will be serving with rice, as well as roasting extra chicken to have on hand for chicken salad and other lunch ideas.

Tuesday: “Butter” roasted radishes + potatoes with orange salmon. My girl over at Tasteslovely has been making roasted radishes, and I’m ready to get on board! Hopefully, the kids will, too *insert smug emoji

Wednesday: Slow Cooker Pumpkin Soup by Real Food Whole Life served with fresh dinner rolls (opt out if you’re currently Whole30-ing), with a basic house salad.

Thursday: Peppers + eggs with giardiniera served on crusty Italian bread (opt out of Whole30-ing). I will be using my mom’s recipe and sharing via Instagram stories.

Friday: Fajita Steak Platter by No Crumbs Left It’s actually in her new cookbook, but similar recipe is linked.
